Day 19: How to make Home made chicken noodle soup (perfect during the cold days while camping or living in your RV)


It's Day 19 and I am going through my other blog (frugalisciousmom) and see some of the recipes I know I can make while we go for camping or if we end up living the RV life one day. This recipe is easy to make (with or without a mixer), you can freeze it and pack it in your cooler when you head to your camp site or just make it while park in your RV spot.

Anyway this is How I make Home made chicken noodle soup (perfect during the cold days while camping or living in your RV)

If there is one dish that my family often ask me to make, this will be it (beside tacos for sure lol). I have been making this since 2004. I learned this dish when hubby and I were living in China. I dont know how to cook a thing then and he is the one who often make something for us. This is one of the dish he passed to me when he retired from cooking lol.

What I love about this is it's very easy to make and it's a lot of fun making with my kids.

Here's what you need - FRESH EGG NOODLES :
  • 3 eggs (2 if they are large)
  • 1/2 cup melted butter
  • 2 cups of flour + more when you start rolling your egg noodles
  • 1/4 cup of water (you may not use it all depends on how big/small the eggs you used so watch out when you pour it)
  • 1 tsp salt (less if you use salted butter)
  • Add everything  except water in your mixing bowl or blender or processor. Pour water as needed until you reach the dough consistency you like.
  • Rest the dough for 10 min
  • Roll the dough and cut it on the length you desire. (i use pizza cutter to cute it quicker I learned this technique from my mother-in-law)
Chicken Soup:
  • 3 cups of chicken broth
  • 2 pieces of chicken (or more, I use only two coz we are living in a budget and I just chopped it finely, the kids prefer the noodles more anyway)
  • 1 tbsp chopped onion
  • 2 pieces of garlic
  • pepper and salt to taste
  • dash of italian seasoning
  • 1 tbsp butter
  • chopped carrots and or celery (optional)
  • place everything in a pan over medium heat or low heat if you want the chicken to be extremely soft. bring this to a boil and add the fresh noodles.
Whatever fresh egg noodles left behind I just freeze it and use it as needed. My son likes to bring them to school for lunch so I always keep them in the freezer so I can easily make it in the morning. He prefers hot meal over cold sandwiches so I am always cooking in the morning breakfast and lunch for him.
