Day 17: How to make Cheese Pimiento Spread #RECIPE (our perfect hiking spread buddy lol)



It's Day 17 and my goal is to think of a recipe that is easy to make but also great for hiking or picnicking or just a quick snack. With that in mind, my version of Cheese Pimiento spread recipe tops my list.

This is such an easy recipe and it only requires 4 ingredients BUT the taste is really good! (you can also add diced pickled jalapeno if you prefer it spicy/hot and if you love bacon you can add bits of bacon on it as well)

INGREDIENTS:



  • 1 cup shredded cheese - I like to use the Colby & Monterey Jack Cheese (pictured below) but you can use your preferred kind of cheese.
  • 1/2 cup mayonnaise 
  • 1/3 cup finely chopped cooked pimientos (directions below) or you can buy a 4 oz sliced pimientos (details below)
  • 2 tbsp finely chopped pickled jalapenos (optional +/- depends on your taste) or a tsp of bacon bits if prefered
  • salt to taste

PROCEDURE:
  • Place all ingredients in a bowl and mix. That's it! how simple is that! If you are gifting this to someone, I like the idea of buying mason jars or decorated container and place a card or bow on top of it. (perfect for holidays or pot luck which I know is common when in RV parks or getting together with friends and family)

Note:

I used to buy the Goya Sliced Pimientos in the store (you can find it in the international aisle or where pickled jalapenos aisle is) but got tired spending $2+ on a small bottle. Since our store always have a great sale for red bell peppers (98 cents per piece) and sometimes I get really lucky and can buy them on the 99 cents produce aisle (check out my previous post on my other blog on why i love checking this aisle) where it is 3+ pieces of bell peppers for 99 cents WOW! The 4 oz goya is only good for 1 recipe above but one whole red bell pepper is good for  making 2 of this recipe so you can imagine why I'd rather make my own ( compared my expense to 98 cents or $4)


Here's the procedure:

  • Wash your red bell pepper and cut it in slices. As You can see I like to save the seeds so I can plant it in our garden. Just dry them and store them in a dark place if you are not yet planting it. They are very easy to grow and we can harvest a lot after a few months.





  • Place them in a pot, sprinkle a dash of salt and 2 tbsp of water. Let them cook for 20 minutes so you can peel them really easy after. I like to cook it high for 10 minutes and then mix it and then simmer for another 10 minutes - add another tablespoon of water if needed (longer if you are having a hard time peeling it).

  • Wait 10 minutes or until cool to touch and then peel the skin. Make sure you drain it so your Cheese Pimiento Spread wont end up runny. I used a paper towel to drain mine and it works great.

  • Once drained, chopped it finely and they are now ready to use! I know it looks like a lot of work but after you do it a few times it gets easier. I also like the fresher taste of it compared to the store bought one and if you like gardening you can harvest your own red bell peppers and use it this way.
We love to bring it whenever we are going for a hike, fishing or just plain picnicking. I bring crackers or loaf bread or even just my homemade tortilla flour. Very easy to pack, light weight, healthy and delish.
