Day 12: How to make Piri-Piri Chicken (grilled, baked or fried)

It's Day 12 and I am making a list of the foods that I want to make sure I will have the recipe when we go full time RVers.
One of our favorite dish pops in my head. It is very easy to make and I usually get a great deal/sale at the store for fresh chickens and lemons. Sometimes I can make this dish in less than $5. It becomes our lunch and dinner. I usually make this as lunch with mashed potatoes and steamed rice. Then at night I use the left overs for Taco. Can you imagine feeding a family of 4 lunch and dinner for $5 - It's really a winner dish for me and my budget haha.

Anyway, this Chicken Recipe is "Grilled Piri-Piri Chicken". It is extremely easy to make and yet so tasty. You can make a few batch and use it in different ways like we do. Beside eating it like we do as it is and taco you can also have it as a sandwich or fajita, topped it on your nachos or salad, chicken quesadilla or chicken wrap - really what ever you want. I also like to sliced it thinly and freeze it just like they do on those cooked chicken for fajitas or salad toppings in the store. Oh you can also prepare it and freeze it as it marinates. Perfect for RV living in my honest opinion.

The great thing about this dish is you don't have to worry if you can't grill it! It taste great too even if you fry it or baked it. I usually use the pizza feature on our little oven to cook it and if you don't have it just set it on 350 F for 25 min (I wrapped it first in foil) and then broil it (open the foil first) for 5-10 minutes depends on how dark you want it. I know some oven gets hotter than others so just make sure you check it on the first 20 minutes to make sure you don't over cook it.

Here's how to make it:
  • 1 lb chicken (breast or thigh preferably)
  • 1 tbsp lemon juice 
  • 1 tsp piri-piri seasoning (less or more depends on how spicy you want it - NO piri-piri? substitute it with pepper flakes or chili powder or cayenne powder + onion powder + garlic powder)
  • 1 tsp onion flakes
  • 2 tbsp soy sauce (add more if you think it's too lemony)
  • 1/4 tsp pepper
  • 1/4 tsp sugar
  • 1 tsp olive oil (or whatever cooking oil you want to use, I never tried coconut oil though)

Mix all the ingredients and marinate at least an hour. Grill and enjoy it how ever you want.
